From looking at her, you’d never know that Dolly Parton is a fantastic cook. But, visit any of her Dollywood properties or her dinner attractions and you’ll pick up on her appreciation for a good Southern-cooked meal. I tried one of her recipes at home—Bodacious Bean Soup—and made a video for you to see how easy it is. The ingredients and directions are below, as well.
What You Need
½ cup dried red kidney beans
½ cup dried great northern beans
½ cup dried pinto beans
½ cup dried navy beans
½ cup dried split green peas
½ cup dried lentils
2 tablespoons olive oil
1 large onion, chopped
1 large garlic clove, chopped
1 celery stalk, chopped
2 carrots, peeled and sliced
2 quarts vegetable or chicken stock, or canned low-sodium broth
1 14.5 oz can crushed tomatoes
Salt and Pepper
Grated Cheddar cheese [optional]
How You Make It
Pick over all the beans, peas, lentils and cover with water. Soak overnight in a large soup pot.
Drain the beans and rinse with cold water. Dry the soup pot.
Heat the oil in the soup pot over medium heat. Add the onion and garlic and sauté until soft and fragrant, about five minutes. Add the celery and carrots and sauté about 10 minutes more. Add the vegetable stock. Now turn up the heat and bring to a boil. Add the beans, peas, lentils, and tomatoes. Reduce the heat and simmer, covered, until the beans are tender, about one hour. Season with salt and pepper and serve with cheese.
